The Upper St. Clair Newcomers’ Club is a women’s organization created in 1955 to help new members of our community get assimilated and make friends. We offer ladies events, playgroups, book club, family and couples events.

Please join us at the Welcome Party on Tuesday, September 16th  to learn more about what Newcomers’ can offer you, and to enjoy food and cocktails with fun, friendly neighborhood women!

Location:
Al’s Cafe

Bethel Park, PA 15102

Please RSVP.

September Book Club — Sharp Objects

Please join us at Cucina Bella for September’s book club meeting to “discuss” Gillian Flynn’s novel, Sharp Objects. Even if (or perhaps especially if) the last thing you read was Good Night Moon, please come for the laughter, food and drinks. I know this has been written often, but if you don’t have time to read the book please come anyway. Reading the book may be an easy way to create a common connection, but forming friendships certainly doesn’t involve required reading.

Summer Playground Playdates!

Beginning Monday, June 2nd Moms and Tots playgroups (and any other interested moms or kiddos) will meet weekly at different playgrounds throughout the township and other surrounding communities.  We will meet at 10am.  Please see the calendar below for dates and locations at a glance, and then RSVP on our website so we know you are coming.  Tuesday will be a make up day in the event of rainy weather.

Please feel free to bring drinks, snacks, toys, etc. to the playgrounds.  We have noted on the schedule all of the playgrounds with sprinklers, from past experience most often these have been turned on, so a change of clothing and/or towels might be a good idea.

Also, for this year some additional meet ups have been planned for Thursdays.  We will meet at each location and each person will pay admission individually (we will not need to sign up/ pay before the event.)  Below are links to each place we plan to meet:

Please attend as many or as few of the activites as you are able!  If you are not a Mom and Tot participant, but have any age children who may enjoy the activities, please join us!

If you have any questions, need directions, or are new to the club and feel you may not recognize members at an event, please feel free to contact Elizabeth at 412-216-6609 or elizabethmcelhone@yahoo.com.

Looking forward to seeing everyone this summer!

Squash Casserole

squash-casserole-sl-l

This classic Southern-style squash casserole recipe is the one you’re always looking for. It’s got yellow squash, cheese, and eggs, and is covered with a buttery cracker crumb topping.

Makes 8 servings

Ingredients

  • 3 pounds yellow squash, sliced
  • 5 tablespoons butter or margarine, divided
  • 1 small onion, chopped (about 1/2 cup)
  • 1 cup (4 ounces) shredded sharp Cheddar cheese
  • 2 large eggs, lightly beaten
  • 1/4 cup mayonnaise
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 20 round buttery crackers, crushed (about 3/4 cup)

Preparation

  1. Cook squash in boiling water to cover in a large skillet 8 to 10 minutes or just until tender. Drain well; gently press between paper towels.
  2. Melt 4 tablespoons butter in skillet over medium-high heat; add onion, and sauté 5 minutes or until tender. Remove skillet from heat; stir in squash, cheese, and next 4 ingredients. Spoon mixture into a lightly greased 11- x 7-inch baking dish.
  3. Melt remaining 1 tablespoon butter. Stir together melted butter and crushed crackers; sprinkle evenly over top of casserole.
  4. Bake at 350° for 30 to 35 minutes or until set.
  5. Note: To lighten, reduce butter to 3 tablespoons, using 2 tablespoons to sauté onion. Substitute 1/2 cup egg substitute for eggs and low-fat versions of mayonnaise, cheese, and crackers. Proceed as directed.

Total Time:45 minPrep:15 minInactive:10 minCook:20 min

Yield:4 to 6 servingsLevel:Easy

Ingredients
  • 6 tablespoons unsalted butter, melted, plus butter for baking dish
  • 1 cup cornmeal
  • 3/4 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs, lightly beaten
  • 1 1/2 cups buttermilk
Directions

Preheat the oven to 425 degrees F. Lightly grease an 8-inch baking dish.

In a large bowl, mix together the cornmeal, flour, sugar, baking powder, baking soda, and salt.

In a separate bowl, mix together the eggs, buttermilk, and butter. Pour the buttermilk mixture into the cornmeal mixture and fold together until there are no dry spots (the batter will still be lumpy). Pour the batter into the prepared baking dish.

Bake until the top is golden brown and tester inserted into the middle of the corn bread comes out clean, about 20 to 25 minutes. Remove the cornbread from the oven and let it cool for 10 minutes before serving.

Carolina-Style Coleslaw

carolina-slaw-18
This flavorful Carolina style coleslaw is made with a tangy vinegar dressing, with sugar, cider vinegar, celery seed, and other seasonings.

Ingredients:

  • 1 large head of cabbage, finely shredded
  • 1 medium bell pepper, finely chopped
  • 1 medium sweet onions, finely chopped
  • 2 carrots, grated

Dressing:

  • 1 cup sugar
  • 1 teaspoon salt
  • 2/3 cup vegetable oil
  • 1 teaspoon dry mustard
  • 1 teaspoon celery seed
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup cider vinegar

Preparation:

Combine coleslaw vegetable ingredients; chopped cabbage, chopped bell pepper, chopped onions, and grated carrots in a large serving bowl.

In a saucepan over medium heat, combine remaining ingredients; bring to a boil. Simmer, stirring, until sugar is dissolved; pour over vegetables and toss well. Cover and refrigerate until thoroughly chilled.

Enough slaw for 8 to 10 servings. Delicious with pulled pork!

Why did you want to join the USC Newcomers’ Club?
My husband’s job is very time demanding, so I was hoping to find some new friends and activities to do. I did not know one person in the area when we moved

Where did you recently move from?
West Virginia

Where did you grow up?
I have lived my whole life in West Virginia prior to this move. I’m originally from Jefferson County, which is a beautiful place full of Civil War History and about an hour and a half from Washington, DC.

Where did you go to college and what did you study?
I received my Masters in Elementary Education from West Virginia University.

What do you do for your day job?
I’m a stay at home mom and a director with Thirty-one.

Do you have any kids? If so what are their names and ages?
When we moved to PA our daughter, Lucy, was only 3 months old. Now she is 3 years old and full of personality.

Do you have any pets?
We have one dog, Samson. He has been in our family for 5 years and just the best dog!

What do you like to do for fun?
I enjoy nature, reading, and dance aerobics. As a family, we go for hikes, to the Zoo, and to museums. It has been so nice to be close to the action here.

What books on your shelf are begging to be read?
Currently, I’m re-reading a childhood favorite of mine. I’m on book 3 of 7 in the Anne of Green Gables series.

What’s the biggest goal you are working on now?
Potty training my daughter- nothing has prepared me for this.

What upcoming Newcomers’ event are you looking forward to attending?
I’m hoping to make it to some of the Ladies Night Out events sometime soon. Now that Lucy isn’t so young it would be lovely to have some conversations with people that are not about Scooby- Do and Princess (not that I don’t also love those chats).

What other things do you want your fellow newcomers to know about yourself?
Just that I love meeting new people, so I’m always up for a playdate with Lucy or coffee chat.
